My Favorite Cookie and Fancy Treat Recipes for Everyday or Entertaining- All Super Easy! 

My mom came from Italy and is truly an amazing chef and baker. She never skimps on the quality of ingredients or takes any kind of short-cuts when it comes to preparing food.   Her results are amazing. I've always wanted to do the same for my family and friends but it always seemed like there was never enough time to do everything I wanted to do, especially when it came to doing things like my mom did. Through the years I found MANY short-cuts! Yay!!! Are the results exactly like my mom's? No. Are they still delicious? Yes. Are they appealing enough to serve to company? Yes. Are my family and friends happy and appreciative? Yes!!! Am I stressed about the time and skill it all takes? No. This is all because I've found easy, quick ways to make some pretty special treats!  I'm going to share ten of my favorite cookie/fancy treat recipes. I truly hope you enjoy making and sharing them. 

1. Chocolate Gingersnaps

You will need:

3/4 cup sugar

Chocolate Cake Mix

1 tablespoon ground ginger

2 eggs

1/3 cup vegetable oil 

Preheat oven to 350 degrees. Use parchment paper on 2 cookie sheets. Place sugar in a little bowl. Combine mix and ginger in large bowl. Add eggs and oil. Stir. Shape dough into 1 inch balls. Roll in sugar. Place on cookie sheet. Bake for 10 minutes.  

     2. Lemon Fancy Cakes 

You will need:

1 lemon cake mix and ingredients to prepare mix

1 stick of butter

3 1/2 cups powdered sugar 

Yellow food coloring 

1 package of crushed lemon candies 

1 lemon 

Preheat oven to 350 degrees. Line 2 muffin tons with paper liners . Prepare cake mix according to directions. Fill muffin tins 2/3 cup full. Bake for 23 minutes. Remove from pan and place on wire racks to cool. 

Prepare frosting by beating butter in large mixing bowl. Gradually add powdered sugar and the juice and zest from one lemon. Add several drops of food coloring. Beat at high speed. 

Frost cupcakes and sprinkle hard candies over frosting. 

 

    3. Crispy Thumbprint Cookies

You will need:

1 yellow cake mix

1/2 cup vegetable oil 

1/4 cup water 

1 egg

3 cups crisped rice cereal 

1/2 cup crushed walnuts

6 tablespoons of your choice preserves ( strawberry, raspberry) 

Preheat oven to 375 degrees. Combine cake mix, oil, water, and egg in bowl. Beat at medium speed with electric mixer until well blended. Add cereal and walnuts.

Drop by spoonfuls onto ungreased cookie sheets. Use thumb to make imprint in the center of each. 

Bake 10 minutes and allow to cool for a few minutes before placing them on wire racks to cool completely. 

  4. Pretty in Pink Peppermint Cupcakes 

 1 white cake mix 

1 and 1/3 cups water 

3 egg whites

2 tablespoons veg oil 

1/2 teaspoon peppermint extract 

3 drops red food coloring 

1 container vanilla frosting 

1/2 cup crushed peppermint candies

Preheat oven to 350 degrees. Use pink or white cupcake liners in 2 cupcake pans. 

Beat cake mix, water, egg whites, oil, peppermint and food coloring with mixer at low speed for 30 seconds and medium speed 2 minutes. 

Spoon batter into muffin cups, 3/4 cup full. Bake 21 minutes. 

When cool, spread frosting and sprinkle with crushed candies.  

       5. Minty Gems 

You will need:

1/3 cup sugar 

1 chocolate cake mix

3 eggs 

1/4 cup butter 

1/4 cup cocoa powder 

144 small pastel mint chips 

Preheat oven to 375 degrees. 

Combine mix, eggs, butter, and cocoa.

Shape dough into 1 inch balls. Roll in sugar. Place on cookie sheets. 

Bake for 9 minutes and then place 3 chips on each cookie. Cool on wire racks.  

   6. Magic Fairy Wands 

You will need: 

4 ounces vanilla candy melts

Food coloring ( unless you want to keep them white)

8 large pretzel rods

Sugar sprinkles 

Melt the candy and add color if desired. Dip pretzel rods in candy and then sprinkle with sugar or any small decorative candy. Place in freezer for 10 minutes. 

  7. Cotton Candy Cupcakes 

You will need:

Strawberry cake mix 

Strawberry frosting 

2 bags purchased cotton candy 

Milk 

1/2 teaspoon vanilla

Preheat oven to 350 degrees

Make cake mix according to directions but use milk instead of water and add vanilla.

Bake and cool. Frost and put a little cotton candy on each one!! What's easier and prettier than that?

      8. Pretty Little Ladybugs

You will need:

24 grapes 

24 toothpicks

24 whole strawberries 

1 package of mini chocolate chips

Assemble by putting grape on first, sliding up and then the strawberry. Place the pointed ends of the chips into the strawberry.  

           9. Super Sweet Chocolate Peanut Butter Marshmallow Dip 

You will need:

1/2 cup creamy peanut butter

2 1/2 cups milk

1 package (4oz) chocolate instant pudding 

Marshmallows to dip and enjoy or other treats such as circus peanuts or animal crackers 

Mix peanut butter and milk. Add pudding mix. Beat with wire whisk until blended. Refrigerate until ready to enjoy. 

      

  10. Lemonade Frosty Treats 

You will need:

3 cups chilled club soda

Assorted fruit sorbets

1/2 cup warm water 

1/2 teaspoon vanilla 

1/2 cup honey

1 cup lemon juice 

Combine lemon juice, honey, vanilla, and water. Mix well. Put in large pitcher or punch bowl. Add club soda. Put in freezer for 5 minutes. 

Scoop mini balls out of the sorbet and put them on top of lemonade when serving. You might also want to add a mint leaf or fresh berries! Enjoy!
